Simple and Easy Memorial Day Recipes
It's official: Summer is almost here! How do we know? Memorial Day is right around the corner! Whether you’re planning on a solo day of relaxation poolside or a barbecue with friends and family, the best celebrations include great food. To make it easier on you (who wants to spend the entire day cooking?), we’re sharing some of our favorite easy Memorial Day recipes and menus.
If you’re having a barbecue in the backyard or taking over the clubhouse of your apartment complex, using standard Memorial Day menus and recipes are always crowd pleasers. These traditional dishes include staples like hamburgers and hot dogs, coleslaw, potato salad (or pasta salad or any other salad), and baked beans.
But there are some easy Memorial Day recipes that fit into a barbecue menu that are sure to impress all your guests. One of our favorite recipes is caprese skewers or a caprese salad, which is fresh mozzarella cheese, tomatoes and basil. Add a little salt and oil and balsamic for extra flavor. We also like using a balsamic glaze, which is a thicker, more flavorful version of balsamic vinegar. It’s a beautiful dish and even better, you are using fresh, seasonal ingredients that you can pick up at your local farmers market. Arrange the salad on a platter alternating the tomatoes, mozzarella and basil, then drizzle with oil and balsamic glaze. If you want to use skewers, purchase small mozzarella balls and cherry tomatoes to alternate on the skewer and then place them on a platter. Your guests will love the beautiful colors and fresh, great taste! For an extra pop of color, use tomatoes in a variety of colors like red and orange.
There are other simple Memorial Day recipes that can elevate your barbecue. Instead of grilling hamburgers and hot dogs, try cooking ribs, chicken and steak kabobs or salmon. If it’s extra hot out, skip the heavy potato or pasta salad in favor of a caprese salad or another dish featuring crisp, fresh and seasonal vegetables.
Ice cream is always a great option for dessert, especially on a warm day, but you can make it even more exciting by making homemade ice cream sandwiches or a homemade ice cream cake.
Even if you’re planning on spending the day soaking in the warm weather alone (although we suggest inviting some pals!), you can still enjoy some simple, tasty Memorial Day recipes. Pack a little cooler full of some easy to eat snacks. We like bringing along:

· Pasta or fruit salad
· Crackers or chips
· Cold fried or rotisserie chicken
